Pretty negligible.
Remember, all of those dried veggies are really really really tiny, had all of the flavor and water sucked out of it, and then treated in a way to ensure a really long shelf life. Also, that’s about a thimbleful of dried veggies, that when re-hydrated would make up maybe 2 or 3 thimblefuls.
Any actual vitamins or health benefit gave up the ghost in them a long time ago. If anything, it just looks pretty and gives a bit of the appearance of veggies, but are now more or less just as healthy and fulfilling as eating a piece of cardboard.
