Can I grow plants in water, without soil?

Yes, you can certainly grow plants hydroponically.  However, it requires specialized treatment to have them grow well.  Since water contains very little of what plants need to grow (except moisture, of course), you need to add a special nutrient mixture in a specific quantity, based on the plants and the container (and thus the amount of water).  Some gardening stores specialize in hydroponics and can help you get started with the correct equipment, nutrients, etc.  There are also lots and lots of websites that can help you.
