Does sprouted moong bean (green gram) contain more protein than soaked green gram?

Yes it does.Moreover it contains double the Vitamin E and double the riboflavin content than un-sprouted one.

the sprouting process(soaking and germinating) makes the nutrients in the grains more highly absorbable , meaning the body doesn’t have to work as hard to break them down . Plus it has increased antioxidant(phytates)capacity leading to enhanced bioavailability.
