A red onion is mildest and the best one to leave raw, making it great for salads, sandwiches, and burgers (the pretty color doesn’t hurt, either). You can cook these, but it will remove much of the color.

A white onion is sharp and crunchy. It can be cooked or left raw. It is very versatile — we always have one in the house.

A yellow onion is sweet and meaty and is generally used for cooking. It offers the most flavor, which generally becomes sweeter and more mild the more it is cooked.
