Gluten is a protein found only in certain varieties of grain. It’s actually a number of different proteins, with different properties, found in wheat, spelt, rye, barley and in oats processed in facilities that also process the other grains, through cross contamination.

Carrots are not grains, therefore carrots do not contain gluten.

Processed foods that contain carrots may also contain gluten, either deliberately as part of the recipe, or through cross contamination due to being processed in a facility that also processes foods that contain gluten.
