If they are fresh tomatoes, this will be even better, but with canned tomatoes, it’s still a nice lite change from heavy pasta dishes. Concentrate on a quality bread and a quality Parmesan to top it with. Just saute a bit of onion in some olive oil, and a little fresh garlic as well…add the tomatoes, with the liquid, and lower the temp…leave to simmer for a while until the liquid is reduced. Meanwhile, boil some interesting pasta, I think buccatini would be perfect. When the pasta is perfectly done, don’t drain it, just remove it from the water with a “spider” and add it to the sauce…if you need to add a little liquid, use some of the pasta water. (With canned tomatoes, I like to add just a sprinkle of fresh lemon juice over the top). Top with chiffonade of fresh basil and that awesome shaved Parmesan cheese. Don’t forget the bread!
