Go to your favourite comparable restaurant and politely ask if there is a time to set up an appointment with the front of house manager as well as the head chef. When you meet with them, ask if you may purchase their services (say $100 each a day on a day off for them) to be independent consultants. When they agree, ask them what you have asked above. Their information will be well worth the money. It is always better to have an operations consultant before you spend a dime on anything else.
