Because a method has been found to render them safe. Amygdaloids are bad news its what is in poison ivy. However cooking them removes the danger. We exist in a world of lethal poisons. Potatoes that have turned green can kill you. Tylinol in excess can kill you. Alcohol mixed with medication can kill you. Water can kill you if you drink enough fast enough. It isn't about whether or not something is toxic it's whether or not you will encounter enough to cause a problem. Dose is everything. Cashew nuts properly roasted or steamed do not have any toxins left.
